As an ambassador for Stonyfield Organic, we are sometimes called upon to participate in really fun recipe challenges, and this one is no exception. The folks at Late July Snacks sent us a bag of their multigrain tortilla chips and our job was to create a yogurt recipe for dipping those delicious chips. As they say, it’s a tough job, but someone had to do it.
Well, okay, it wasn’t really a tough job after all. If you know me, I need easy recipes to both follow and to create. So I came up with a super easy mango, avocado, yogurt chip dip recipe that is perfect for summer entertaining, or any entertaining for that matter. Summertime is the perfect time to enjoy chips and dip outside with friends, on a picnic, or just lounging on the deck. This baby is even coming with me to a barbecue this weekend!
What do these three ingredients have in common? They go together amazingly well! Both Stonyfield Organic and Late July Snacks make all of their products without the use of pesticides, artificial hormones, antibiotics, or GMOs. Those are my kind of companies!
Mango Chip Dip
1 ripe avocado, peeled and pitted
1 cup nonfat plain yogurt
1 tablespoon + 1/4 teaspoon of lime juice
2 mangoes, peeled, pitted and cut into chunks
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
I use all organic ingredients to maintain the natural goodness of the Stonyfield yogurt and Late July chips.
Place avocado ingredients in a food processor. Process until smooth.
If you prefer to have slightly chunkier pieces of mango in your dip, blend all other ingredients first, then add in the mango and blend to your desired consistency.
Cover and refrigerate prior to serving. Tastes best when chilled.
For an added twist, try Late July’s Jalepeno Lime flavored chips with this dip. It’s delicious!
