This season, 10 fabulous bloggers have gathered together to stock you up with real food cookie recipes for your holiday season in a #RealCookieSwap! Whether you’re hosting or attending a cookie swap or headed to a holiday party, bring with you some treats that not only taste amazing but use unrefined ingredients as well.
Gluten-free recipes are perfect for this family, so that everyone can enjoy the treats. I opted to make a gluten-free lemon sugar cookie, one of my personal favorites! In my home we use as many GMO-free, gluten-free, and organic ingredients as possible, so you can bet that these were made with love. They taste great without any icing at all, yet I added some pretty décor to make the cookies more festive for serving at holiday parties. White is a pretty, wintery option that goes well with the lemon theme and looks fantastic on any tray. It is also holiday neutral and a great option for people who prefer to avoid food dyes.
In line with our #RealCookieSwap theme, we have 3 amazing companies who are sponsoring our giveaway! As you know, butter is a common ingredient in holiday baking. You can up the flavor by using a quality butter (and supporting a sustainable company at the same time). Kerrygold butters are made with milk from grass fed cows in Ireland with no additives or hormones added. You will taste (and see the difference).
Continuing on with sustainability in baking, it’s important to use an ecofriendly choice in not just your ingredients, but your baking products too. If You Care carries a full line of ecofriendly products, such as pie pans, baking pans, parchment paper. Their packaging shows exactly where the product came from and where it can go after use.
Both of these products can found at your local Whole Foods as well as everything else you need to stock up on your holiday baking essentials!
Now, let’s get to that recipe, shall we?
Gluten-Free Iced Lemon Sugar Cookies
2 /14 cups Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
1 tsp Bob’s Red Mill All Natural Baking Soda
1 tsp Salt
1 package Kerrygold Unsalted Pure Irish Butter, softened
¾ cup Sugar
¾ cup Brown Sugar, packed
1 tsp Gluten Free Vanilla Extract
2 large Eggs
½ tsp Young Living Lemon Essential Oil or 1 tsp Lemon extract
1 package Wilton White Sparkling Sugar Sprinkles
3-4 packages Wilton White Sparkle Gel
Preheat oven to 375 degrees. Mix flour, baking soda, and salt in one bowl and set aside. In another bowl, use mixer on low setting to lightly beat butter and eggs. Add in lemon oil while beating. Turn mixer to medium speed and slowly add in sugar and brown sugar while mixing until ingredients are blended. While mixing, slowly add in the remaining dry ingredients from the first bowl and mix on high until well blended.
Roll dough into 1” balls. Place them at least 2 inches apart on an ungreased cookie sheet. (Mixture will spread quite a bit on the cookie sheet, so it is best to keep the cookie balls small and well separated.) Bake for 10-12 minutes or until a light golden brown. (Cookies will get crisp upon leaving the oven.) Let cool on baking sheet for 10 minutes. Move to tray for immediate serving or to rack for additional cooling.
For a more festive look, add sparkle gel and sprinkles to cookies approximately 10 minutes after cooling.
Makes approximately 50 cookies.
