Gluten-free recipes are perfect for this family, so that everyone can enjoy the treats. I opted to make a gluten-free lemon sugar cookie, one of my personal favorites! In my home we use as many GMO-free, gluten-free, and organic ingredients as possible, so you can bet that these were made with love. They taste great without any icing at all, yet I added some pretty décor to make the cookies more festive for serving at holiday parties. White is a pretty, wintery option that goes well with the lemon theme and looks fantastic on any tray. It is also holiday neutral and a great option for people who prefer to avoid food dyes.

Now, let’s get to that recipe, shall we?
Gluten-Free Iced Lemon Sugar Cookies
2 /14 cups Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
1 tsp Bob’s Red Mill All Natural Baking Soda
1 tsp Salt
1 package Kerrygold Unsalted Pure Irish Butter, softened
¾ cup Sugar
¾ cup Brown Sugar, packed
1 tsp Gluten Free Vanilla Extract
2 large Eggs
½ tsp Young Living Lemon Essential Oil or 1 tsp Lemon extract
1 package Wilton White Sparkling Sugar Sprinkles
3-4 packages Wilton White Sparkle Gel
Preheat oven to 375 degrees. Mix flour, baking soda, and salt in one bowl and set aside. In another bowl, use mixer on low setting to lightly beat butter and eggs. Add in lemon oil while beating. Turn mixer to medium speed and slowly add in sugar and brown sugar while mixing until ingredients are blended. While mixing, slowly add in the remaining dry ingredients from the first bowl and mix on high until well blended.
Roll dough into 1” balls. Place them at least 2 inches apart on an ungreased cookie sheet. (Mixture will spread quite a bit on the cookie sheet, so it is best to keep the cookie balls small and well separated.) Bake for 10-12 minutes or until a light golden brown. (Cookies will get crisp upon leaving the oven.) Let cool on baking sheet for 10 minutes. Move to tray for immediate serving or to rack for additional cooling.
For a more festive look, add sparkle gel and sprinkles to cookies approximately 10 minutes after cooling.
Makes approximately 50 cookies.
