Several weeks ago I shared with you a recipe for a healthy, gluten-free Tex-Mex Rice Stir recipe that, by the way, my older son has been bugging me all week to make again.
A Stir is a dinner recipe that begins with a base of Della rice. Toppings can include a variety of proteins, vegetables, and sauces. You pick. You decide. You create your own stir and dinner is served! These rice bowl creations are made with ingredients that you already have on hand and enjoy eating. It also allows you to get really creative! Over the past couple of months, myself and all of the Della Rice ambassadors have been sharing our stir creations on our sites.
This concept is perfect for me, because I’m not one of those fancy cooks who can take two completely mismatching ingredients and make them taste like a little bit of heaven. Simplicity, health (preferably GMO-free and/or organic), and practicality are my keys to a good meal. A gluten-free dinner recipe is also always welcome in our home.

My husband and I eat often at a local Japanese restaurant where they serve this fantastic dish. It comes to the table in a hot ceramic skillet type of bowl. At the table they crack an egg over the dish, and it literally cooks itself over the rice dish while you watch. That was the inspiration for this stir.
Gluten-Free “Fried” Rice Stir
Makes approximately 8 servings.
Takes approximately 45 minutes to prepare.
2 1/2 Cups Della Light Brown Basmati Rice
2 Cups Shrimp
2 Chicken Breasts
4 Cups Yellow Corn
4 Cups Vegetable Blend (Carrots, Corn and Peas)
10-12 Tbsp Gluten-Free Soy Sauce
10 Tbsp Olive Oil
Dash of Salt to Taste
Optional: The beauty of a stir is that they are flexible and made to taste. If these vegetables are not your family’s preference, swap them out for chopped broccoli instead. If you love shrimp, add more. Or if you don’t like shrimp, make beef instead!
Note: The ingredient serving sizes listed here are also approximates. I wanted to have enough for my family to be able to choose their own selections. We did have plenty of leftover vegetables.
– Prepare Della Light Brown Basmati Rice as directed. Set aside.
– In a separate pan, add 1 Tbsp of Olive Oil. Cook Shrimp. Set aside.
– In another pan, add 1 Tbsp of Olive Oil and a dash of Salt. Cook Chicken. Set aside.
– In a clean pan or skillet, add 2 Tbsp Olive Oil and 3 Tbsp Soy Sauce. Put stove on a low heat setting.
– Add 2 Cups of cooked Brown Rice to the pan.
– On top, add your ingredients of preference. For my rice bowl, I added shrimp and about 1 cup of mixed vegetables.
– Crack 2 eggs over the pan. Turn heat to a low-medium setting. Let the mixture sit for a moment.
Do the same process for each stir you create! This is all about your preferences. My kids don’t eat shrimp, so they went with chicken. My husband did too. One kids had chicken and mixed vegetables with 3 Tpspn of soy sauce, while the other chose chicken with corn and just 1 Tbsp of soy sauce.
