As you may know if you have visited this site before, eating healthy and having healthy foods available for my family is incredibly important to me. When Della Rice approached me about their Create a Stir campaign, the first thing I asked is about the harvesting of the product itself. It turns out that their product is grown in Arkansas, that the facility is gluten-free and non-GMO, and that the product comes in BPA-free packaging. Bingo! In January 2015, Della rolled out all five of its rice varieties (Arborio, Basmati White Rice, Basmati Light Brown Rice, Jasmine White Rice, and Jasmine with Roasted Garlic) in ShopRite grocery stores.
So, what is this Create a Stir campaign all about? A Stir is a dinner creation (think about your favorite rice bowl). The stir begins with a base of Della rice. Toppings can include a variety of proteins, vegetables, and sauces. You pick. You decide. You create your own stir and dinner is served! These rice bowl creations are made with ingredients that you already have on hand and enjoy eating. It also allows you to get really creative!

In our house we all love tacos, but frankly, we are getting a little bored with taco night. And with the Big Game coming up this weekend, a Tex-Mex type stir sounded like the perfect idea.
Here’s what I love about this recipe. First of all, hitting all four food groups, it is super healthy, gluten free, low sodium, and low in saturated fat. It can also be made using all GMO free ingredients! Equally important is that it can be made to taste. If your family does not like avocado, for example, then simply substitute it for another healthy alternative! My family tends to enjoy their food without too much of a kick, so I keep it light on the seasoning. However, if your family prefers to spice things up, feel free to go heavier on the taco seasoning, and add some jalepenos while you’re at it!
Here’s my version of a super easy, super healthy (and super simple) Tex-Mex Turkey Rice Bowl Stir:
Makes about 4-6 servings.
Takes approximately 35 minutes to prepare.
1 1/2 Cups Della Arborio White Rice
1 Package (10 oz.) Lean Ground Turkey Meat
1 1/2 Cups Romaine Lettuce, Shredded
2/3 Cup Low-Fat Shredded Cheese (My bowl has mozarella, but cheddar works just as well)
1 1/2 Avocados, Cubed
1 Cup Yellow Corn
1/4 Cup Olive Oil
1/4 Cup Parsley
2 1/4 Teaspoon Salt
1 Cup Grape Tomatoes, Sliced
1 Tbsp Lime Juice
1 Pinch Pepper
Taco Seasoning to Taste
Taco Sauce or Salsa to Taste
– Prepare Della White Rice as directed.
– While rice is cooking, begin to sauté the Turkey Meat in a pan with olive oil. Pour in the Parsley. Add the salt. Season to taste using Taco Seasoning and Lime Juice if desired. While the Ground Meat is cooking in the pan, chop it into ground sized pieces.
– Add about 2/3 of the cooked Rice into a large serving bowl.
– Then add about 2/3 of the ground Turkey Meat to the bowl. Be sure to pour in the juices in too.
– Next add some about half (1/4 cup of Corn) and about 1/2 of the sliced (1/2 cup) of Grape Tomatoes to the bowl.
– Add the remainder of the Turkey Meat too the bowl.
– Top it off with the remainder of the Rice.
– Add the lettuce, Corn, Avocado, Tomato, and Shredded Cheese.
– Sprinkle a pinch of Pepper over the top.
If your family prefers a spicier kick, drizzle taco sauce or salsa over the top of the bowl, and dig in!
