Motherhood Memories: Jo-Lynne’s Friday Night Chili

Connie's Friday Night ChiliIn honor of Mother’s Day, I asked a few of my friends to share a recipe that they are sharing with their children or one that brings back memories of cooking with their mother.  Today’s Cooking With Mom post is written by Jo-Lynne Shane of MusingsofaHousewife.com Her Mother’s Day recipe comes from her mom, Connie:

My mom is known for several culinary delights. The most noteworthy is certainly her pies. She is a master pie maker, and everyone knows when they come to her house for a holiday dinner, she is sure to have at least three. Another one of her famous recipes is my grandmother’s sweet rolls. They make an appearance at every Christmas and Easter breakfast. But the third is not a sweet treat.

Instead, this is the meal she would always cook on a winter evening when she was going to be serving a crowd. Her chili is much loved, and to me it’s the ultimate comfort food. She taught both me and my brother to make it so it will surely live on. I like to serve it with chopped scallions, shredded cheddar cheese and sour cream, but in this photo all I had was sour cream.

Friday Night Chili
Here’s the breakdown:

Connie’s Friday Night Chili

Ingredients:

  • 2 lbs ground beef
  • 4 cloves garlic, minced
  • 3 large onions, chopped
  • 2 16-oz cans red kidney beans
  • 1 16 oz can pinto beans
  • 32 oz tomato sauce
  • 1 can diced tomatoes
  • 3 Tablespoons chili powder
  • 2 tsp sea salt
  • 2 tsp oregano
  • 2 tsp garlic salt
  • 2 tsp ground black pepper
  • 1-1/2 tsp cumin
  • 3 cups water

Instructions:

  1. Brown meat, garlic and onions.
  2. Add remaining ingredients.
  3. Simmer an hour, uncovered.
  4. Garnish with chopped scallions, grated cheddar, and sour cream.
  5. Serve with corn muffins.
